it’s almost thanksgiving for some of us (i’m totally making a pie this weekend anyway, i can’t wait until november), which means pumpkin pie time. this is the recipe i use:
libby’s® famous pumpkin pie recipe (ya rly)
ingredients:
2 eggs, slightly beaten
1 can (16 oz.) libby’s solid pack pumpkin (or whatever brand you want to use)
3/4 cup sugar
1/2 tsp. salt
1 tsp. ground cinnamon
1/2 tsp. ground ginger
1/4 tsp. ground cloves
1 1/2 cups (12 fl. oz. can) undiluted carnation evaporated milk (or whatever brand)
1 9-inch unbaked homemade pie shell with high fluted edge (use this or your own recipe)
preheat oven to 425 F.
combine filling ingredients in order given; pour into pie shell.
bake 15 minutes.
reduce temperature to 350 F.
bake an additional 45 minutes or until knife inserted near centre comes out clean.
let cool (and then nom away).
Thanks for posting this, but Kristen’s grandmother is the pie queen of rural nova scotia, so I think I will try her recipe out first.
