how i learned to stop worrying and love the sugar coma, part the second

Here continues the saga begun in theme baking, part the first: first there were the cupcakes. And then – oh, and then. Then came the scourge known as cookie-stuffed cookies.

I could not make this up if I tried. Given how simple the concept is, I’m actually kind of surprised none of us cookie enthusiasts had thought of it before – but perhaps it was just too outlandish. No more. The boundaries of reason and virtue have been broken, and it is in the form of Oreos stuffed inside chocolate-chip cookies.

The Outside: my go-to vegan chocolate chip cookie recipe, lightly cinnamoned and guaranteed to satisfy. (Slightly modified from this recipe.)

INGREDIENTS:
– 2 cups flour
– 2 tsp baking powder
– 1/2 tsp salt
– 1/4 to 1/2 tsp cinnamon
– as many chocolate or carob chips as you deem necessary
– 1 cup sugar (I usually cut it down to about 3/4 cup)
– 1/2 cup oil (again, in a very slight concession to health, I try to sub 1/4 cup applesauce or soymilk)
– 1 tsp vanilla
– 1/4 cup water

WHAT TO DO:
– Preheat oven to 350 degrees.
– Mix together flour, baking powder, salt, cinnamon, and chocolate chips. Make a well in the center and set aside.
– In a separate bowl, mix together sugar and oil. Add the vanilla and then add the water, and mix well. Add the wet ingredients to dry, mix, and add more chocolate chips if necessary.

The Inside: Double Stuf Oreos. Ohhhh yeah.
(Double Stuf only. That single-stuf shit simply will not fly here. Go big or go home.)

Now, put about a tablespoon of cookie dough on each side of an Oreo. With well-floured hands (seriously, this is sticky dough and it needs to stay on the cookie, not on you), press the dough down and seal it around the Oreo so it is totally encased in the outer cookie layer. Add more dough to the seam if necessary. Repeat until you run out of Oreos or dough or both. My batch made about 18 of these suckers.

Bake at 350 for about 8-10 minutes or so (this is variable depending on your oven; just check them periodically as you would with normal chocolate-chip cookies, but don’t expect them to brown too much on the top since they’re so thick).

THE END RESULT:

What at first appears to be just a normal (if slightly oversized) vegan chocolate-chip cookie…
An innocent-looking lump of dough, concealing MADNESS WITHIN

…soon reveals the MADNESS lurking within.
oh good lord.

These things are definitely an intense cookie experience, but are well-worth the effort and are a ton of fun to make into adorable little cookie packages. Go forth!
